A Weekend In Dublin (7/7)

 

These pictures were taken during a long weekend break in Dublin during July 2002.

  

 

 

 

Here I am next to a scaled down model of one of the vessels used for fermentation. After use and before anyone was sent inside to clean it a burning candle was lowered down to ensure sufficient oxygen had entered, otherwise the person could suffocate in the carbon dioxide.

 

 

 

 

 

 

Distillation was achieved using these heated copper vessels. Irish whiskey is distilled three times unlike Scottish whisky which is distilled twice.

 

 

 

 

 

 

 

 

If we take bottles of whiskey home with us they might break during the journey - so we'll take a few of these instead!

 

 

 

 

 

 

Duty had to be paid on whiskey just as it does today. Even though the distillery on this site has been closed for many years the tax is so complicated that this chap is still trying to work it out.

 

 

 

 

 

 

After the visit to the old distillery we returned to the guest house to pick up our bags and then took the bus back to the airport. This final picture was taken through the airplane window as we flew over Liverpool and the Mersey Estuary.
